Preheat the oven to 180°C.
Grease a Lil’ Legacy Pan thoroughly with 1 tablespoon of butter.
Dust the base and sides of the pan with the freshly ground coffee.
Cream the softened butter and brown sugar until light and combined.
Add the eggs one at a time, beating lightly after each addition.
Fold through the mashed banana and vanilla essence.
Dissolve the baking soda in the boiling milk.
Add the milk mixture to the batter.
Add the baking powder, flour and finely ground coffee, then beat lightly until just combined.
Fold through the chopped dark chocolate.
Spoon the batter into the prepared pan and smooth the top.
Bake for 30–35 minutes, until a skewer inserted into the centre comes out clean.
Leave the cake in the pan for 5 minutes.
Carefully turn it onto a wire rack and leave it to cool completely.
To make the frosting, beat the cream cheese, butter, icing sugar and instant coffee until thick and creamy.
Transfer one-third of the frosting to a separate bowl.
Stir the melted chocolate through the smaller portion until evenly combined.
Spread the coffee frosting over the cooled cake.
Finish with a thinner layer of the chocolate frosting.
Sprinkle with crushed coffee beans and extra chopped chocolate, if using.
This recipe begins with a banana cake made many times over and a simple question about what might make it feel new again. Coffee is worked through the cake itself, while a coating of butter and freshly ground beans forms a slightly crisp crust around the outside. Chunks of dark chocolate melt through the soft banana crumb. The frosting comes in two layers. First, a thick coffee cream cheese icing, followed by a smaller amount mixed with melted chocolate. Serve it once the frosting has settled, with the coffee still clear against the sweetness of the banana.
